Calf’s liver Sicilian Style
1 lb calf’s
liver thinly sliced
1 lb onion
thinly sliced
1 T olive
oil
1 sprig
fresh oregano
Salt, sugar,
flour to dust
2 T butter
8 basil leafs,
chiffonade
Ground black
pepper
2 T balsamic
Vinegar
3 oz raisin
soaked in warm water
3 oz toasted
pine nuts
8 oz brown sauce
-Heat oil and
sauté onions golden, add oregano, salt and sugar and drain, safe oil
-Dust liver
with flour
-Heat 1 oz butter add saved oil to smoking and sear
liver add chiffonade of basil ,onions and vinegar, and sauce .raisin and pine
nuts toasted, serve right away, serve with crusty Italian bread.
